Healthy Pasta Primavera With Chicken

Ingredients:

  • 2 boneless skinless chicken breasts (1 1/4 to 1 1/2 lb.) lb.) cut into 1-inch cubes
  • 2 1/2 tsp. salt, divided
  • 2 tsp. ground black pepper, plus more for garnish
  • 4 Tbsp. butter, divided
  • 1/4 c. olive oil
  • 16 oz. dried short pasta, such as penne, rotini, or cavatappi
  • 1 32-oz. container chicken broth
  • 3 carrots, thinly sliced (about 2 cups)
  • 2 c. asparagus pieces, about 1-inch long, from 1 bunch (woody stems removed)
  • 1 1/2 c. fresh or frozen peas
  • 2 c. cherry tomatoes, halved
  • 6 garlic cloves, grated
  • 1 1/2 c. freshly grated parmesan cheese
  • 1 lemon, zested then cut in half
  • 1/2 c. chopped fresh basil, plus more for garnish

Instructions:

Step No.01

One and a half teaspoons of salt and one teaspoon of pepper are used to season the chicken. Fill a large Dutch oven with all the olive oil and 2 tablespoons butter, and place over medium-high heat.

Step No.02

Season the chicken and add it to the pan. Simmer the chicken for approximately five minutes, stirring now and then, or until it is lightly browned all over. Transfer the chicken from the pan to a platter using a slotted spoon, then put it aside.

Step No.03

Stir the pasta to coat it in the oil mixture after adding it to the pan. After adding the broth and two cups of water, simmer the mixture. Simmer for six minutes on medium or medium low heat, stirring now and then to avoid sticking.

Step No.04

Add the peas, asparagus, and carrots and stir. For about 4 minutes, or until the pasta and veggies are just soft, cover the saucepan and cook.

Step No.05

Take the pot off the cover. To the pan, add the cooked chicken, tomatoes, and grated garlic. To reheat the chicken, cook, stirring regularly, for about 2 minutes.

Step No.06

Take off the heat and whisk in the remaining 1 teaspoon each of salt and pepper, parmesan cheese, zest, and juice from the lemon, along with the remaining 2 tablespoons of butter.

Step No.07

Add the basil and stir immediately before serving. If desired, sprinkle extra parmesan and basil over each serving.
