A fritter with cheese, bacon, and tons of vegetables? Whether you serve these for lunch or dinner, they will undoubtedly be a hit.
Ingredients:
- 8 shortcut bacon rashers
- 1 tbsp extra virgin olive oil, plus extra, for shallow-frying
- 2 green onions, chopped
- 1 garlic clove, crushed
- 1 large (250g) zucchini, grated
- 200g orange sweet potato, peeled, grated
- 1 cup grated tasty cheese
- 1 1/2 cups self-raising flour
- 1 cup milk
- 2 eggs, lightly beaten
- Mixed salad, to serve
- Plain Greek-style yoghurt, to serve
Instructions:
Step No:01
Chop half of the bacon finely. In a small frying pan, heat the oil over medium heat. Saute chopped bacon for 5 minutes, stirring regularly, or until it begins to become brown. Add the garlic and onion. Cook for 2 minutes, stirring occasionally, or until onion is tender. Take off the heat. Put aside to cool.
Step No:02
In a big bowl, mix cheese, sweet potatoes, and zucchini. Stir in flour and the cooled bacon mixture. Blend thoroughly. Pour in the egg and milk. Use plenty of salt and pepper to season. Toss to blend well.
Step No:03
To a big frying pan, add enough additional oil to reach 5 mm up the side of the pan. Turn the heat to medium. Pour 1/4 cup batter into the pan and spread it out to create a circle. To make four fritters, repeat three more times. Cook until cooked through and golden brown, 4 to 5 minutes per side. Transfer to a paper towel-lined tray. Loosely cover to stay warm. Continue with the remaining batter, adding more oil to the pan as needed.
Step No:04
In the meantime, turn up the heat to medium-high in the small frying pan. Transfer the leftover bacon to the pan. Fry for 5 minutes, turning occasionally, or until crisp and brown. On a paper towel, drain. Present fritters with yoghurt, salad, and bacon.
